Black Bean Lettuce Cups with Mango-Cucumber Salsa
Ingredients
- Juice of 2 limes (¼ cup)
- 2 tablespoons olive oil
- ½ teaspoon ancho pepper
- 1 teaspoon kosher salt
- 1 can black beans, drained and rinsed
- 3 scallions, thinly sliced
- ¼ cup chopped cilantro, plus more leaves to garnish
- 1 ripe mango, peeled, pitted, and diced
- 1 small Japanese cucumber, peeled halfway, and diced
- 2 tablespoons minced red onion
- 1 head Romaine hearts, washed and dried
Directions
1. Combine lime juice, olive oil, chili powder, and salt in a small bowl.
2. Combine black beans, scallions, and cilantro in a separate bowl. Add half of the lime dressing and toss gently to combine.
3. Add mango, cucumber, and red onion to the bowl with remaining lime dressing. Toss to combine. Taste and add more salt if needed.
4. Line romaine hearts on a serving platter. Fill with black bean mixture then top with mango salsa. Top with cilantro leaves and serve.
Chorizo-Stuffed Mushrooms
Ingredients
- 15 large crimini or baby portabella mushrooms
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 2 cloves garlic
- ¼ cup Italian parsley leaves, plus more for garnish
- 2 scallions, trimmed and chopped
- ½ cup walnuts
- 9 ounces pork chorizo
- ¼ cup grated Cotija cheese, plus more for garnish
Directions
1. Heat oven to 325°F.
2. Wipe mushrooms clean and remove stems. Toss mushroom caps with olive oil, salt, and pepper and place in a single row on a baking sheet.
3. Combine mushroom stems, garlic, parsley, scallions, walnuts, in a food processor. Pulse until finely minced, but not a paste.
4. Heat a large frying pan over medium heat. Remove chorizo from its casing and cook, breaking up with the back of a wooden spoon until starting to brown. Add mushroom stem mixture and cook another 1-2 minutes. Remove from heat and stir in Cotija cheese.
5. Divide filling evenly between mushroom caps and bake until mushrooms are tender and filling is browned about 40 minutes.
6. Transfer to a serving tray, sprinkle with parsley and more Cotija and serve
Sweet Potato Nachos with Black Beans and Smoked Cheddar
Ingredients
- 4 large sweet potatoes
- 2 tablespoons olive oil
- 1 (15.5 ounce can) black beans, drained and rinsed
- 8 ounces smoked cheddar cheese, shredded
- ¼ cup chopped cilantro
Directions
1. Arrange racks in the upper and lower third of the oven and heat the oven to 425°F. Peel and cut the sweet potatoes into ½-inch thick sticks.
2. Divide sweet potatoes evenly between two sheet pans and drizzle each pan with 1 tablespoon of the oil. Season generously with salt and pepper and toss to combine.
3. Spread out the sweet potato sticks into a single layer and roast in the oven until tender, about 25 minutes, rotating the pans halfway through.
4. Remove sweet potatoes from the oven and move the upper rack to the middle of the oven. Heat the broiler to high.
5. Transfer one tray of sweet potatoes to an oven-safe platter and top with half the black beans and half the cheddar.
6. Top with the other tray of sweet potatoes and layer the remaining black beans and cheddar over the top.
