Homemade Home Bowl

Now that the holidays are over, let’s talk about football! It’s a sport that everyone loves to watch and one that can be a great excuse to gather and enjoy one another’s company. I can’t tell you how many times my family has gathered to watch the big game. While the little kids run around outside with the cousins, the adults are inside enjoying football and eating. In our family, no football game is complete without yummy food, and today I want to share with you a few ideas and out-of-the-box game day recipes to add flair to your Game Day party!

Homemade Home Bowl

My family is all about simple and delicious recipes, so each of us is in charge of bringing a yummy appetizer to share. Bite-size appetizers are my favorite, and these “Quesadilla” Fresca RITZwiches are just that — bite-size, simple and delicious!

Ingredients:

  • 12 RITZ Crackers
  • 2 ounces queso fresco, cut into 6 pieces
  • 1 tablespoon chopped canned chipotle peppers in adobo sauce
  • 6 fresh cilantro leaves

Directions:

Fill crackers with remaining ingredients to make 6 cracker sandwiches.

  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1 beef flank steak (1/2 lb.)
  • 5 1/2 ounces (1/2 of 11-ounce package) frozen ripe plantains (maduros)
  • 48 RITZ Crackers
  • 1/4 cup fresh salsa

Directions:

Step 1: Heat grill to medium heat.

Step 2: Combine seasonings; sprinkle evenly onto both sides of steak.

Step 3: Grill 6 to 8 minutes on each side or until done (160 degrees F); cool. Meanwhile, cook plantains as directed on package; cool.

Step 4: Cut steak across the grain into 24 thin slices, cut each slice in half. Cut plantains into 48 pieces.

Step 5: Top crackers with meat, plantains and salsa.
