These taco bites are a great grab-and-go mini appetizer to add to your get-together menu. Just pop tortillas into a muffin tin, pack them full of cheese and beans, bake and finish with yummy taco toppings. Fiesta on!
Ingredients:
- 6-inch flour tortillas (we used Old El Paso)
- 1 can refried beans (we used Old El Paso)
- 1 cup shredded Mexican blend cheese
- Toppings (we used sour cream, diced tomatoes, shredded Mexican blend cheese and chopped cilantro)
Materials:
- 4-inch cookie cutter
- Muffin tin
Step 1: Using a 4-inch cookie cutter and 6-inch tortillas, cut out 12 tortilla circles. (Tip: Cut the remaining tortilla edges into pieces, brush with melted butter, sprinkle with cinnamon and sugar, spread out on a baking sheet, and bake for 5 minutes, then flip over and bake for 5 minutes more — dessert!)
Step 2: Mold tortilla circles into muffin tin cups and fill your taco bites starting with a layer of cheese, then refried beans, and finally another layer of shredded cheese. Bake for 15-20 minutes or until cheese is melted.
Step 3: Let your bites cool for 5 minutes, then pop out of tin, garnish and serve.
