Three Easy Weeknight Meals Kids and Parents Alike Will Love

Ingredients:

 

Pot Pie Pockets 

  • Premade Pie Dough 
  • 1 can chicken pot pie soup
  • Water for binding edges

 

Mexican Pizza Quesadilla 

  • Flour tortillas 
  • ½ lbs. ground beef
  • 1 pk. taco seasoning 
  • 1 can refried beans 
  • 8 oz. Mexican style shredded cheese 
  • ¼ cup chopped tomatoes
  • ¼ cup sliced olives 
  • ¼ cup green onions 

 

Baked Ravioli Bites

  • Premade ravioli 
  • ½ cup breadcrumbs 
  • ¼ cup grated parmesan cheese
  • 1 tbsp. oregano 
  • 1 tbsp. salt 
  • 1 tsp. pepper 
  • 2 egg whites 
  • 1 tbsp. water 

 

Directions:
 
Pot Pie Pockets
1. Pre-heat over to 400°.
2. Lay flat pie crust and cut into 8 equal squared slices.
3. Brush water on edges and fill center with pot pie soup filling .
4. Top with squared pie crust and pinch edges close with a fork.
5. Take a knife and slice an “X” to the top of the pocket. This insures the steam won’t burst the crust while baking.
6. If there is excess pie crust on the edges, slice off with a knife.
7. Place in oven to bake for 15 – 20 mins, or until golden brown.
8. Remove from oven, let cool, serve and enjoy!

 

Mexican-Style Quesadilla Pizza
1. Preheat oven to 350° degrees.
2. Prepare ground beef with pre-packaged taco seasoning and set aside.
3. In a pan or flat top grill add oil and tortilla, immediately add a nice layer of shredded cheese. Top with taco seasoned grounded beef and more cheese to bind the top tortilla.
4. Top with second tortilla and let bottom brown. Once brown carefully flip to other side.
5. Once cheese is melted and both sides are browned, removed from heat and place onto baking sheet.
6. Top with a thick layer of refried beans and a thick layer of cheese.
7. Place in oven for 10 mins, or until cheese is completely melted.
8. Remove from oven and let cool.
9. Top with chopped tomatoes, green onions and sliced olives. Serve with sour cream if you’d like and enjoy!

 

Baked Ravioli Bites
1. If pre-made raviolis are frozen, allow to thaw for 20 mins.
2. Preheat oven to 350°.
3. Add together bread crumbs, grated parmesan cheese, salt, pepper and oregano. Mix throughly so all ingredients are evenly distributed.
4. Add two egg whites to a bowl and mix throughly.
5. Take thawed and paper dried raviolis and dip into egg whites, then into the bread crumb mixture and place onto oiled baking sheet.
6. Take a fork and poke each ravioli. This will prevent the raviolis from pillowing up.
7. Bake for 10-15 mins. or until crust is golden brown.
8. Remove from oven, let cool, serve with marinara sauce for dipping and enjoy!
